Recipe: Enjoy the sounds of summer while savouring this delicious salad.
While we’re all about the sense of hearing at Peel Audiology, we don’t ignore our taste buds. Here’s one of our favourite summertime recipes for you to try. It’ll add a little Canadiana to your cooking! Check it out.
Summer. It looks beautiful. And it SOUNDS wonderful! There’s nothing like getting outside and enjoying everything there is to see and hear when trees are blooming and birds are singing.
And nothing adds colour and flavour to an outdoor meal like a delicious salad. Here’s a Whitewater Cooks salad recipe we’re particularly fond of:
Spring Salad with Maple Balsamic Vinaigrette (serves 8)
(a recipe from Whitewater Cooks)
12 cups spring greens
1/2 cup crumbled goat cheese or gorgonzola
¾ cup caramelized pecans
1 cup fresh strawberries, sliced
1 tbsp. maple syrup
2 tbsp. balsamic vinegar
1 tbsp. soy sauce
1 clove garlic, crushed
1 tbsp. sesame oil
1 tsp. pepper
½ cup olive oil
PREPARING YOUR PECANS:
Spread pecans on baking tray and roast in 350F oven until beginning to brown. Remove and toss with enough melted butter to lightly coat. Sprinkle nuts with 2 tsp white sugar and 1 tsp salt and toss. Return to oven for a few minutes but be careful to not burn them.
Toss salad ingredients with the dressing.
